grain free banana muffins

I've been following the adorable Danielle from Against All Grain for quite some time now, but my love for her was confirmed when I got her new cookbook.  It's the best cookbook I've ever owned.  I was geeky giddy when I got a "like" on instagram from her when I posted this picture of my boys enjoying her grain free cookies.  Shhhhh, don't tell them they were free of any refined junk....they still don't know.


She has an incredible story about how going paleo basically saved her life.  Truly inspiring.  I've made her banana bread several times now and if these don't convince you that grain free food tastes delicious,  you're pretty much a hopeless cause.



Grain Free Banana Muffins
2 tbsp coconut oil, melted
4 large eggs
3 tbsp honey
1 tsp vanilla extract
1/2 tsp apple cider vinegar
1/2 cup coconut flour
1/4 cup almond flour
1 tsp baking soda
1/2 tsp sea salt
1/2 cup coconut milk (full fat from a can)
3 large ripe bananas

1.  Preheat oven to 350 degrees and grease a muffin tin with coconut oil

2.  In a stand mixer, combine eggs, vanilla, coconut oil, and honey.  Mix for 30 seconds.

3.   In a separate bowl, combine the coconut flour, almond flour, baking soda, and salt.  Add this to the mixer and mix for another 30 seconds, or until completely combined.

4. In a separate bowl, mash bananas and coconut milk together until mixture resembles baby food.  Add this mixture to the other ingredients and mix until fully combined.

5.  Divide equally into 12 regular sized muffin tins and bake for 23 minutes or until they just start to brown on the tops.  

Variations:
*You can also use an 8x4 loaf pan - bake for 45 minutes, or until a toothpick inserted into the center comes out clean

*Add a 1/2 cup of optional mix-ins including chocolate chips, walnuts, dried cranberries, or raisins.

grain free biscuits


These biscuits were my first true Paleo goodie and boy were they delish.  Most of all, they kept me so full throughout the morning!

Ingredients:
1-1/2 Tbs coconut flour, plus 1 Tbs for dusting
1 3/4 c almond flour
1/4 tsp salt
1/2 tsp baking soda
1/4 c softened coconut oil
2 eggs
2 Tbs honey
2 Tbs almond milk

Directions:
1.  Combine flours, salt and baking soda
2.  In separate bowl, cream together the coconut oil, eggs, honey, and almond milk
3.  Add the flour mixture to the wet ingredients until combined
4.  Line your baking sheet with parchment paper, sprinkle coconut flour on parchment paper
5.  Divide the dough into 4 parts, then put some coconut flour on your hands to keep from sticking
6.  Roll each part into a ball, then place on parchment paper
7.  Sprinkle another tsp of flour on top of each ball
8.  Use your hand to flatten each ball to 1.5 inch thickness
9.  Bake at 350 degrees for 15 minutes
I loved this with butter and jam (not so paleo!)

mango salsa

This has been my quick, refreshing, go-to recipe for all the delicious summer BBQs we've been attending.  This is a great side dish, yummy on tacos, or even throw on a salad.

Mango Salsa
1 large mango, peeled, seeded, diced (or use frozen, chopped mango...time saver!)
1/4 c finely chopped red onion
1 1/2 tsp minced cilantro
1 tsp freshly squeezed lime juice
2 Tbs finely diced red bell pepper
1/4 tsp salt

Combine all ingredients, mixing well.  Serve chilled

chunky (paleo) chocolate chip cookies

One of my favorite treats is a homemade chocolate chip cookie.  I've spent many a weekend trying to perfect the perfect cookie - butter vs. crisco, white vs. brown sugar ratio, adding oatmeal, etc. I got pretty close to making my idea of the perfect cookie.  I still enjoy making cooking with my boys, it's just not a once a week activity like it used to be.

I've been searching high and low for a grain-free, paleo cookie that would satisfy that need for something sweet, yet still remain compliant.  Enter the "Welcome to Chunky Town" chocolate chip cookie from Taylor Made It Paleo.  This girl is adorable and makes some pretty amazing looking treats.

So many of her recipes look delicious, but I decided to try these cookies because her mom said they were the best paleo treat she's ever made.  I'd say that's probably the truth because these are delicious!

The players:


Chunky Chocolate Chip Cookies

1 cup sunflower seed butter*
1/3 cup honey
1 egg
1 tsp vanilla
1 tbsp cinnamon
1/2 tsp baking powder
1/2 tsp baking soda
salt to taste
1/2 cup chopped walnuts**
1/2 cup Enjoy Life chocolate chips***

Preheat oven to 350 degrees.  Mix all ingredients together in a bowl.  Using a cookie scoop, spoon mixture into balls on a cookie sheet lined with parchment paper.  Press cookies down lightly with a fork.  Bake for 12-15 minutes.  Enjoy!!


*I used creamy, but chunky would be great, too. You could also sub any other nut butter.
**Any nut would be yummy
***Target now carries Enjoy Life chips!  They are soy, dairy, and nut free.  I'm sure you could substitute with any chocolate chip.

sugar detox - done!

Another food challenge is in the books - hurrah!  I wish I could say I was 100% compliant during the 21 day sugar detox, but I certainly wasn't.  I had a few moments of weakness towards the end - one involving homemade pizza and the other involving beer (maybe a couple times).  Other than that, I did ok.

I will say I think this was harder than the Whole 30, even though it was shorter, because of the no fruit rule.  I sure do love me some berries and I really missed them over the past three weeks.  I had strawberries and blueberries yesterday and they tasted like candy.  So good!


I got to spend my last day of the detox with my cousin, Gretchen, at our semi-annual cousin day.  It was fun to chat about our experience and enjoy our taco salads together while everyone else ate theirs with shells.  We decided we wouldn't be very good 21DSD coaches because we kept convincing each other that it was ok to have a beer or glass of wine.  We both managed to steer clear of the dessert table, which included Gretchen's famous chocolate chip cookies.

I will definitely say that cutting out sugar and glutens makes you feel horrible at first, but then you feel amazing.  Clear head, less bloat, more energy, clearer skin, better sleep - these are just a few of the things Gretchen and I both experienced on the detox.  You do not know how bad some foods can make you feel until you eat only real food.  I will say that I overindulged a bit yesterday and I felt AWFUL last night.  There is something to be said about eating less sugar and glutens.

So, where to go from here?  I plan to have a few days to enjoy the foods I missed (hello bread) and then I hope to eat a mostly Paleo diet from here on out.  I will not be perfect all the time, but knowing how good it makes me feel is worth it most of the time.

sugar detox - day 12

Well friends, we are over half way done with the 21 Day Sugar Detox. Yahoo!  Week two has certainly been a lot better than week one.  The first week was tough, I'm not going to lie.  Throwing a holiday right in the middle probably wasn't the best idea either.  This week I feel like I've gotten into a groove and this is just becoming the normal way to eat.

My super fun cousin, Gretchen, is also doing the detox with me, and it's been so fun to have someone along for the ride.  I'm lucky to be surrounded by a lot of amazing women in my family and Gretchen is no exception.  She is the mama of two adorable kiddos and has an incredible husband, Thad. She is the most amazing hostess and their house is party central when we all get together.

I asked her a few questions about how she's feeling on day 12.

Hi.....I'm Gretchen and I'm a sugar addict.  



What made you decide to do the 21 Day Sugar Detox?
Katie made me do it.  No really, I have been trying to get rid of gluten for a while, and just needed a boost.  Thought this would be a good way to get it out of my system!

What have been your go-to foods on the detox?  Any foods you didn't eat before that you now enjoy?
Avocado.  Easy, yummy and filling.  Nothing really new, but have been eating hard boiled eggs at breakfast even though eggs kind of creep me out.  Always ate veggies, but eating more now than I did.

What has been the hardest food (or drink) to give up?
Beer, which is weird because I don't really drink much.  But it is summer, and with friends by the pool, or down at the lake.....well...I may have had a slip up or two...."Happy birthday, America"

Do you plan to continue this lifestyle after the detox ends?  Or where are you hoping this detox takes you, in terms of food?
I plan to keep up the no gluten.  I will not go back to the Greek yogurt I used to have every morning.  I will add back in fruit - hello fresh peaches!!

I failed to formally ask Gretchen the biggest question of all - How are you feeling??  I do know that she is feeling great, sleeping "like a teenager" and not missing the desserts at all.  Like me, week one was tough and week two seems like a breeze.  I'd completely agree with all her answers and I cannot wait to dive into peaches (and berries!) when the detox is over.

If you've at all been thinking about doing a detox, or something similar, go for it!  You will not be disappointed!

cauliflower mashed "taters"

I tried a new roast recipe today, and there is nothing that goes better with roast than mashed potatoes.  I could seriously eat my weight in mashed potatoes.  It ties with stuffing as my favorite food at Thanksgiving.  My mom used to get so mad at me because I always said I liked my grandma's potatoes best.  Come to find out they were instant and from a box.  Ooopsies!

Anyway, white potatoes are no longer a part of my everyday life, so I had to find a substitute.  Enter mashed cauliflower "taters!"  This recipe is super easy and delish!  The original calls for 5 cloves of garlic, but I thought that might be a bit much, so I used 4.  I think next time I'd do 3.

Cauliflower Mashed "Taters"

1 large head of cauliflower
3-4 cloves garlic
2 tbsp butter
salt, to taste
pepper, to taste

Trim your cauliflower into florets and stems.  Slice the garlic cloves.  Steam your cauliflower and garlic together for about 10 minutes, or until soft.  I did this in a steamer basket over a pot of water.  You could probably microwave it, too.  It's critical to steam the garlic, or your taters will be way too garlicky.  Throw the steamed cauliflower, garlic, butter, salt, and pepper into a food processor and puree it until it is completely smooth.  Enjoy!

sugar detox - day 8

I think I was just a tad bit cocky going into this 21 day sugar detox.  I thought since I eat fairly paleo compliant most days, I wouldn't have much trouble.  WRONG!  Even though I didn't eat many grains or much sugar before the detox, I still had that option if I want to indulge in, say, a bowl of delicious peanut butter and chocolate ice cream that my husband brought home on day 3 (grrrrr).  I could eat a bowl and move on.  Not so fast.  I now have to consciously make a decision about everything I put up to my mouth.  Which is a good thing.  I think.  Here's the good, bad, and ugly eight days in:

The Good: 
-Increase in energy level over the past few day
-I sleep like a baby (Why do we say that?  My babies never slept.  Like ever.)
-I don't have that gross, bloated feeling after each meal
-My clothes fit better and I've lost a few pounds
-I read every nutrition label for everything I put in my mouth

The Bad:  
-Headaches.  Oh goodness, the headaches.  The first few days were brutal.  The sugar withdrawal, even for someone without a ton of sugar consumption, was hard.  That seems to be getting better in the past few days.  
-I miss fruit.  Like big time.  Going to the farmer's market is like being in a torture chamber.  The berries!  The peaches!  All so yummy this time of year.
-Social settings with tons of food are tough

The Ugly:
-I had a minor slip up on the Fourth of July and indulged in a few beers.  That was it though.  How can you celebrate the Fourth without beer?  I resisted my mom's homemade ice cream, which was the true test.  It was beer or ice cream and I chose beer.
-Shhhhh, don't tell the detox police, but I have had a green apple and a green tipped banana in the SAME day.  Yikes!  
-I have had a few red apples, mainly because I was out of green ones.  And they are just better.  There, I said it.


Actually, I shouldn't be too hard on the green apple because it has been my savior for the past 8 days.  When you can't eat anything sweet, you really look forward to the one "treat" you can have each day.  I dip mine in sunflower seed butter and it's delish.  Plus, I once had a student call me "Granny Smith" so it seems fitting.

21 day sugar detox

I'm not sure how or why I get myself into these "challenge" type things, but I seem to have found another one to complete.  I talked a little bit about the Whole30 I did back in October, and this one is similar.  It's a 21 day sugar detox.  It's essentially NO sugar for 21 days.  That means no fruit (except green tipped bananas - what the wha? and green apples), no carbs, no processed anything, no sweeteners of any kind (even honey) and obviously no sweets or desserts.  Seem a little crazy, but hey, I love a challenge, so tomorrow I will start!

Yes, yes, we all know sugar is bad, but that little white substance is in everything.  It has a million different names and comes in a billion different forms, so it can be very sneaky.  My eyes were really open to this when I did my Whole30 and literally had to read every food label.  If you take the time to look, you will be shocked where you find sugar.  Also, I am in no way saying that fruit is bad, actually it's very good, but it does contain quite a bit of sugar, so that's why is out for the next 21 days.

I do limit my sugar already, and eat little grains, so I'm hoping it won't be too difficult.  The Fourth of July holiday and all its homemade ice cream goodness might throw me a curve ball, so if you see me reach for that spoon, just slap it out of my hand.

I went out with a bang tonight and had spaghetti with rolls and one of these babies, which actually does NOT pair well with spaghetti.


Ahhhhh, tastes like summer.  I'll just hold on to that feeling for the next 21 days.

homemade tortillas

Whole Wheat Tortillas
 2 1/2 c whole wheat flour
1/2 c oil (I used avocado oil)
1 tsp salt
1 c warm water

Directions:
1.  In a mixer, add the flour, oil, and salt.  Mix for 3-5 minutes or until crumbly.
2.  With the mixer running, gradually add the water, mixing for 3 minutes.
3.  Take out the dough and roll it into a log.  You're going to cut this into 12 slices.  I cut it in half and then go from there.  
4.  Using your hands, roll each piece into a ball.  Place on a baking sheet and cover with plastic wrap.  Let come to room temperature for about 15 minutes up to 1 hour.
5.  Head a 12 inch skillet on medium-high heat.  
6.  On a lightly floured surface, use a rolling pin and roll each ball into a 8 to 10  inch flat circle.  
7.  Grease the pan with a bit of oil.  Carefully cook each tortilla one at a time until puffy brown, about 30-45 seconds on each side.  Enjoy! 


These were really filling so we only ate 3!  I wrapped up the rest and popped in the freezer.  Just defrost before dinner and reheat.

paleo granola

This recipe is very similar to the grainless granola bars I posted, but it's less bar-like and more cereal-like.  If there's anything I miss almost as much as bread, it's cereal.  This gives that same sweet, yummy crunch as cereal, but it's grain free. You could top it with homemade almond milk for a quick breakfast.

sweet potato and kale chicken patties

These chicken patties are one of my all time favorite Paleo recipes. I've tried them with both ground chicken breast and ground thighs, and the thighs are way better. I topped them with guacamole - yum!  I have used spinach instead of kale and they are still super tasty. 



Sweet Potato and Kale Chicken Patties
1 pound ground chicken thighs
2 green onions, finely chopped
1/2 medium sweet potato, shredded
2 1/2 cups kale, finely chopped (leaves only)
1/2 tsp salt
1 garlic clove, minced
1 tsp paprika
1 tsp Dijon mustard
1 egg
2 tbsp coconut flour

Instructions:
Heat 1 tsp coconut oil or avocado oil in a medium skillet over high heat.  Add green onions and cook until tender, about 3 to 5 minutes.

Add sweet potatoes and cook for 4 to 5 more minutes, until barely tender.  Add kale and cook until wilted, about 2 to 3 minutes.

Put chicken in a large mixing bowl and add salt, garlic, paprika, mustard, egg, coconut flour, and sweet potato mix. Mix together with hands until well combined.

Cover and refrigerate at least 4 hours.

Divide your mixture into 6 or 7 even patties. Coat the bottom of a pan with coconut oil (or bacon grease - yum!) and cook patties until a golden crust forms, about 5 to 6 minutes.  Flip and cook for another 5 or 6 minutes, or until cooked through.

I have also grilled these over high heat for about 5 minutes a side.

eat like a caveman

I truly think I have Crossfit to thank for my new found love of all things healthy.  When I first started going to classes, everyone was always talking about eating Paleo.  Huh?  I had never heard of it, but I didn't want to be the joker that asked "what's that?" so I went home and googled it.  I was shocked to see hundreds and hundreds of websites about Paleo.  Have I been living under a rock?  How have I never heard of this??

So, what is it?  The Paleolithic diet (AKA - Paleo) diet is essentially eating the way the cavemen ate.  If you can hunt it or gather it, you can eat it.  If it's found in a box or a bag, you can't.  If it contains sugar or grains, it's out.  No legumes or hydrogenated oils.  It completely makes sense that our bodies were not made to process junk.  Here's a simple way to look at what you can eat.


I dove head first into the Paleo lifestyle when I completed a Whole30 back in October.  The Whole30 is basically Paleo on speed, and is 30 days of nothing but good, clean eating.  You can read all about it in the book, It Starts With Food.  It was an incredibly tough, yet amazingly eye opening 30 days, and I feel like it was a springboard into this new lifestyle. 

I now eat Paleo most of the time.  I say most because I am not perfect and I do still love me some grains every now and then.  Bread has always been my favorite food and it's been by far the toughest to give up.  Sure, there are alternatives out there, but nothing beats a good ole piece of toasted sourdough.  Mmmmmmmm.......

So what's the benefit?  Most people think weight loss is the number one benefit, but I'd disagree. Sure, if you cut out all processed food, refined sugars, and grains, you're probably going to lose some weight.  But that's not what it's all about.  It's about changing the food you put in your mouth and living a more healthy life.  I don't even like to call it a "diet" because it's a lifestyle change, not a short-term weight loss solution.

Again, just like Crossfit, this is not for everyone. If you're a vegetarian or vegan, it might be hard to gnaw on a turkey leg like a caveman.  But, if you're looking for sometime new to try because you've tried everything else out there, give Paleo a go for one week.  Just one week.  You will not be sorry!!

for the love of crossfit

Growing up, I played sports pretty much year round. Softball, gymnastics, golf, tennis, basketball, volleyball, etc, I pretty much tried them all.  Some I was pretty good at, some I was one season and done.  I loved the competition and the team atmosphere that sports provided, plus pretty much all of my friends were made through sports.  I spent the summers playing ball all over the midwest with these girls and they were (and some still are) my best friends.


As most athletes experience, once the team sports went away, I was left wondering, "How the heck am I going to keep myself in shape?"  Most people turn to running, but see, running and I have a major issue - I really despise it and clearly it hates me too.  I've worked out at the gym off and on for years, but never really found anything I enjoyed.  It was always a chore and I dreaded going.  I knew a few people who did Crossfit, so I decided to look into it.   Crossfit is defined as constantly varied movements performed at a relatively high intensity. Seemed like a good match for me - gymnastics type movements, weight lifting, and cardio all rolled into one.  So, nearly a year ago, I stepped WAY outside my comfort zone, took a free class, and was hooked that very first night.   


I was barely able to get out of bed that next day, but I knew I had found something that would change my life.  Sounds so cliche, but it's true.  The workouts are the most intense, hard, limit pushing things I've ever done, and I love that aspect of it, but the atmosphere is what I love best.  I've met some pretty incredible people and have the most amazing, supportive coaches.  It's a competitive atmosphere (everything is timed), yet everyone is there to cheer you on.  With the help of my Crossfit family, I've pushed myself to do things I never thought possible. When I stepped into the box a year ago, I couldn't even begin to do a pull-up, now I can do them without any assistance.  A year ago I had no idea how to deadlift, now I can lift way more than I weigh.

Crossfit is not for everyone, I certainly realize that, but if you're like me and find yourself bored to tears with your current workout, go find the nearest box and take the plunge!  You will not be sorry, sore, yes, but not sorry.

artificial food dyes

Kraft Mac and Cheese has really been in the spotlight lately, and not in a good way.  The adorable Vani over at Food Babe has been on a mission to get Kraft to remove the artificial dyes, specifically Yellow 5 and Yellow 6, from their beloved blue box.  So, why the big uproar over food dyes?  Haven't we been eating out of the blue box since we were kids?  Yes, but it's time for a change and here's why:

Artificial Food Dyes are:

-Man-made in a lab with chemicals derived from petroleum, which is also used in gasoline, diesel fuel, asphalt, and tar - mmmmmm, delish!

-Found in nine different forms in the US, however Red 40, Yellow 5, and Yellow 6 make up 90% of the market.

-Banned in countries like Austria and Norway.  The UK is phasing them out and requires a warning label on foods containing dyes.  A warning label!  

-Linked to hyperactivity in children and can have a negative impact on their learning

-Linked to long-term health problems such as asthma, skin rashes, and migraines

The craziest thing about these dyes is that they add absolutely no nutritional value to foods, nor do they add any sort of flavor.  The Kraft Mac and Cheese sold in the UK does not have any dyes and it looks and tastes just like the blue box stuff you get in the US.

This is a fascinating experiment done by a sixth grader for his science fair project.  Basically he trained his mice to run through a maze for three weeks.  Then he added Yellow 5 to the water to see if it would change the time it took them to get through the maze.  The mice were able to make it though the maze in 20 seconds with just plain water, but when the dye was added the mice became disoriented and it took them nearly 10 times as long to get through the maze.  One mouse even became aggressive and attacked his cage mate. No wonder our kiddos seem so out of it at times!!!

So, what can you do?  

READ the labels on everything you buy.  You'd be shocked where you will find dyes.  I was visiting my parents and my mom had picked up a few cute boxes of Life cereal for my kiddos.  Seems pretty harmless, right?  I was reading the label and I was shocked to see it had Yellow 5 and Yellow 6.  The cereal is BROWN!  Why on earth would it need a food dye?  

Start small and change a few things in your kitchen that contain food dyes.  Annie's is a great brand and can be found in most grocery stores or at Target.  Health food markets like Whole Foods and Trader Joe's won't sell anything with an artificial dye.

homemade ranch dressing

Ranch has quickly passed up ketchup as the favorite condiment in our house.  E requests "ench" at just about every meal and dips everything from carrots to apple slices in the creamy goodness.  Until recently I truly thought I was doing good just buying the "light" variety of a popular ranch brand.  Ummmm, NO!  Have you looked at the ingredients?  What the heck is disodium guanylate?  Rule number one - if you can't pronounce it, don't eat it!!

I decided step one to unprocessing our lives would be getting rid of the bottled stuff.  I tried out this recipe from the Pioneer Woman (love her!) and it passed the picky four year old test.  Wahoo!!  I decided I couldn't put jarred mayo in my homemade ranch, so I whipped up a batch of that, too.

Homemade Ranch Dressing (From Pioneer Woman)
1 clove garlic
1/4 tsp salt
1 cup mayo
1/2 cup sour cream
1/4 cup parsley, minced
2 tbsp dill
1 tbsp chives
1 tsp Worcestershire sauce
1/2 tsp black pepper
1/2 tsp white vinegar
1/4 tsp paprika
1/8 tsp cayenne pepper
1/4 to 1/2 cup buttermilk (depending on desired consistency

I just threw everything into the food processor and mixed it up for a bit.  Both boys said it was delish.  Point for Mom!

homemade mayo

I love me some mayo. I like mayo so much that one year my teaching partner, Lindsey, gave me a VAT of it for Christmas. I'm not kidding, it was huge! And yes, I finished off every last bit of it. Well, mayo from the jar is probably a no no in the unprocessed world, so I had to find a way to make my own. Lo! An unprocessed mayo!

Homemade Mayo
1 large egg
2 tbsp lemon juice
1/4 cup plus 1 cup light olive oil (NOT extra virgin!)
1/2 tsp dry mustard
1/2 tsp salt

Crack the egg into your food processor (or blender) and add the lemon juice. Let them come to room temperature, about 30 minutes. Then add 1/4 cup olive oil, the mustard, and salt to the canister.  Blend until all are combined. Now here comes the fun part. With the food processor turned on, add the remaining cup of olive oil by pouring very, very slow. You want to skinniest stream possible.  This should take 2-3 minutes. Don't rush it or it will not work. Patience, my friend, patience! Once all the olive oil is incorporated, it should turn into a lovely, white yumminess. It will keep in the fridge until the egg expiration date.

a very honest company

Lindsey was actually the one to turn me onto The Honest Company a few years ago.  We were having lunch at Panera and she insisted I try her new hand sanitizer.  I tried it, and liked it, but didn't think much about it.  Later I decided to look deeper into the products and I've been hooked ever since.  The company was started by the adorable Jessica Alba after she struggled to find safe products for her family.  They are all natural and non-toxic, but really, really work.  I have converted all of my cleaning and laundry supplies to Honest products and they are all truly amazing!  I once said that all the toilets in heaven must be cleaned with their bathroom cleaner.  It's that good!  The healing balm is better on my little guy's bottom than any other diaper cream out there.


I use the shampoo/body wash on both my boys (ages 2 and 4) and it leaves them smelling delish!  However, if I had to pick a favorite product, hands down it would be the stain remover.  This stuff is incredible.  My boys are MESSY and I've never had a stain it couldn't tackle.  It once removed a stain that had been washed and dried.  Good stuff.
